Thank you Kostas for this, Aglaia left an indelible impression of food and culture. Aglaia’s books were the ones I chose to give as gifts to my daughters who already made classic Greek dishes, her books were not just recipes (thank goodness) but included culture and regional Greek cooking. Now my 4 year old granddaughter is learning. Your use of Fig leaves with fish was eye opening.
